Healthy Bite: 1 - Frittata

It’s an Italian Egg dish, simple to make and healthy. It’s similar to making an omelet but it’s cooked at very low heat and thicker than the usual omelet. Generally served in slices but you can make a thinner layer too if you like to. Objective is to have good lot of chopped Veggies like Bell Peppers (Red, Yellow or Green), Jalapenos, Spinach, Cilantro, peas, onions (spring onions would be better) pinch of salt to taste sauté them in Olive oil until just tender and add beaten eggs and a quick mix. Cook on a very low heat up to 10-15 mins until the underside is cooked but the top is bit runny or tender.

I like it baked. I mix all the veggies and beaten eggs in a greased baking dish and bake it for 10 to 15mins on 450 Degrees. Serve it with salads or wheat bread.
You can add 1 tablespoon of milk while whisking the eggs and how many eggs depend on the person as how much they like to. I make it 5 eggs serving 2 members. Below is the pic of my first hands on Frittata.
In case you are worried about fat from yolks. Try making it from egg whites only. Then it should be a perfect healthy dish. J Enjoy!
