Sharing this brunch just before
the weekend as you can give your hands on trial on theseJ for this weekend. Have all the chopped veggies
- Spinach
- Green Chilies
- Mushrooms
- Red &/ Yellow Bell Peppers
- Cucumbers
- Onions
- Tomatoes
- Ginger
- Olives
and 2 eggs in a bowl, sprinkle salt as per your taste and black pepper as shown in picture below:

A tablespoon of olive oil in a skillet,
fry onions, chilies and ginger, followed by bell peppers and spinach, sprinkle
salt as per your taste. Towards the end once all the veggies are little fried add cucumbers and olives stir for couple of minutes and set aside. While
you are working on this you can prepare an omelet from the 2 eggs in a bowl.
Once done, fill the omelet with
veggies and serve with Bread and juice (Well, I guess it’s difficult to change few
things - my husband is great fan of white breadJ)
Or you can serve these same
veggies with scrambled eggs and half croissant.
